Sulfur dioxide (IUPAC-recommended spelling) or sulphur dioxide (traditional Commonwealth English) is the chemical compound with the formula SO2. It is a toxic gas responsible for the odor of burnt matches. It is released naturally by volcanic activity and is produced as a by-product of copper extraction and the burning of sulfur-bearing fossil fuels. It was known to alchemists as "volatile spirit of sulfur" since at least 16th century.
Sulfur dioxide is a very useful compound in winemaking, and its E code is E220. It is present even in so-called "sulfur-free" wines, at concentrations up to 10 mg per liter. It acts as an antibiotic and antioxidant, preventing wine from being damaged and oxidized by bacteria. It also helps maintain volatile acidity at desired levels. The reason why wine labels say "contains sulfites" is because of sulfur dioxide. According to US and EU laws, if the SO2 concentration of wine is less than 10 ppm, it does not need to be labeled "contains sulfites". The upper limit of SO2 concentration allowed in wine is 350ppm in the United States, while in the EU it is 160ppm for red wine and 210ppm for white wine. If the concentration of SO2 is very low, it is difficult to detect, but when the concentration is greater than 50 ppm, the smell of SO2 can be smelled with the nose and tasted with the tongue.
